(Please forgive me for not posting since Monday. I was in the hospital (more on that in Friday’s
post!). So today I’m playing catch-up
with what I had for Tuesday, Wednesday, Thursday and about my hospital stay on
Friday’s. And now, on to the special
Election Day Post I had planned for you!…)
AN ELECTION DAY TRADITION
For years, my Mom worked every Election Day at the polls
as the Republican-appointed worker.
Keeping it all level, there was also a Democrat-appointed worker along
side of her. Mom became friends with her counter-part, a very sweet lady named
Lois Roth, who lived a few blocks from us.
Every year, Lois made a HUGE tine of delicious homemade caramel popcorn,
and Mom always said that she couldn’t stop eating it once Lois got it out early
that morning.
Lois Roth was also a very generous lady, because when Mom
asked for this special recipe (for what she always swore was the best caramel
popcorn she had ever tasted), she walked it down to our house the next
day. So now it’s an election day
tradition for me, too! Mom and Lois are
both in Heaven, and I’m sure they’ll be watching the returns together tonight …
and probably munching on this outstanding treat. Mom always DID SAY IT WAS “Heavenly”!!!
LOIS ROTH’S CARAMEL POPCORN

quarts popped corn, unsalted (1 cup unpopped)
1/2
cup dark Karo syrup
2
sticks margarine
2
cps brown sugar (light or dark)
1/2
tsp. cream of tartar
1
tsp. baking soda
Combine syrup, cream of tartar,
brown sugar and margarine in a 3-quart saucepan. Bring to a boil over medium heat and let boil
for 5 minutes, stirring constantly. Remove
from heat.
Beat in baking soda. The syrup will turn light and foam up. Pour over popcorn and mix well.
Place on large cookie sheets and
bake 40 minutes in a 250 degree oven.
Stir about ever 10 minutes. Turn
out on waxed paper lined counter top until cold. Break into chunks and store in airtight tin.
ELECTION UPDATE!!!
It was a GREAT day for the Republican Party! Control of the House and and Senate -- and new hopes for America. Now let's start working towards 2016!!!!!
