A SCOTCH TREAT



These are some of the best cookies you’ll ever taste.  We discovered them at the home of the mother of our cousin’s girlfriend.  Rosemary Babcock was a sweet lady who always made you feel at home when you were at her house.  One night, she was in the kitchen baking some cookies for her son Mike.  She brought some out to Linda and me, and we flipped for them.  My Mom always said that if you didn’t like Rosemary Babcock, you didn’t like people.  The same could be said for these little treats.  If you don’t like Oatmeal Scotchies, you don’t like cookies!

OATMEAL SCOTCHIES

Beat together until creamy:

1-1/2 c. packed brown sugar
1 cup butter
2 eggs
1 T. water

Combine:

2 cups flour
2 tsp. baking powder1 tsp. baking soda
1 tsp. salt

Blend in butter mixture.  Mix in:

1-1/2 c. quick oats (uncooked)
1/2 tsp. orange extract
1 (12 oz) pkg. Nestle butterscotch morsels

Drop slightly rounded teaspoonfuls onto greased cookie sheet.  Make at 350 degrees for 10-13 minutes.  Makes about 4 dozen.

  1. Oh, I can almost taste them even as I write!! Yum-o!!! NO BETTER cookies than these Oatmeal Scotchies!! And how right you are--- NO SWEETER person than Rosemary! She was always kind and caring---just a NICE person! I am so happy to get this recipe and thanks for it and for the memories!
