Welcome Back to the Swamp!!!

Welcome to another GAME DAY here in Florida!  My gators must have needed the break because after the game with Idaho was called because of lightning on the field, the boys in orange & blue came back and walloped the Eastern Michigan Eagles  0-65!!!!!!!!  Well, as we say down here “No one gets out of the Swamp alive except the Gators”.  And the Eagles sure didn’t.  Let’s see how it goes for Kentucky’s Wildcats today!

I don't mess around when it comes to Tailgate Food.  And I don’t make pretend guacamole.   No party is complete without it. 

Guacamole is just one of those foods for which you MUST use the best ingredients.  Not cheap, overly ripe avocados that you got on sale.  No seasoning that you guess at.  It's important to get it right.

I’ve taken a lot of the guessing out of it for you.  Here’s the recipe of choice for the Brossart Tailgate days.  And we HAVE to get it right, or we’d have GATORS after us!

GUACAMOLE

4 ripe but not overly-ripe Haas avocadoes
Juice of 3 limes  
1/4 cup chopped white onion (or yellow, your call)
1 Clove minced garlic
1/4 cup sour cream
Kosher salt and freshly ground black pepper
2 plum tomatoes, chopped
Tortilla chips, for serving


Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl.  Mash with the lime juice, onions, garlic, sour cream and a big pinch of salt and pepper to desire consistency (chunky or more smooth). Fold in the tomatoes and serve with tortilla chips.

  1. GO GATORS---even though I AM a Wildcat fan too! But NOT when they play the Gators! The guacamole recipe looks delicious! There is something exciting about Fall and football season---and having one's favorite snacks on hand!
