CHARLIE THE TUNA IS BACK IN VOGUE



I remember coming home from school at lunch time for a tuna fish sandwich.  And when I started working, I took many tuna sandwiches to work with me.  I’m sure everyone has.  But this is SO MUCH BETTER than you remember tuna salad!!!  Try it, and you’ll find yourself packing this retro classic for your kids, too!

PERFECT TUNA SALAD

4 small cans of Starkist or Bumble Bee Solid White Albacore Tuna, packed in water ~ don’t use any other kind!!!
2 stalks of celery, finely chopped
1/2 cup Hellman’s Mayonnaise -or- Miracle Whip ***
A Dash to 1/4 teaspoon of onion powder
-1 teaspoon Dehydrated Chopped Chives
a Dash to 1/2 teaspoons of celery salt
a Dash to 1/8 teaspoon of Paprika
a Dash to 1/4 teaspoon of Dill Weed
a Dash to 1/4 teaspoon of Tarragon (Optional!)
a Dash to 1/4 teaspoon of Garlic Powder (Optional!)
Sea Salt and Pepper to taste
Green Leaf or Iceberg Lettuce
8 slices of just white bread, toasted

*** Start with just 1/2 cup of mayonnaise and add more as needed; as there is just no way to fix too much mayonnaise… UNLESS you have more Tuna!

Drain Tuna of as much water as possible!  In a large bowl, coarsely break apart the Tuna with the back of a fork.

Gently mix together the Tuna, mayonnaise, celery, onions and the seasonings of your choice.

Cover, and refrigerate for at least 4 hours, or overnight.

To serve, spread equal amounts on 4 slices bread; top the Tuna salad with the 4 remaining bread slices to make sandwiches.  If using the plain white bread its best to cut it into triangles (Cut bread into an “X”).   Enjoy!

  1. Tuna sandwiches--what a memory of your childhood! I remember how MUCH you loved them!! I can remember Mom's green "pie keep" and it was ALWAYS FULL of tuna fish cans!! Just stacked on top of each other!!
