IN MEMORY OF MY FATHER



On July 6, 1967, my life changed forever.  My 48 year old father, Winford Amyx, died from a massive heart attack brought on from Tropical Phagedena, which he contacted during his years in the Philippines (World War II).  It is when lesion that occurs on the skin, caused by many different microorganisms such as mycobacteria. The disease is common in tropical climes, and is often a result of continuous exposure to damp, unsanitary conditions. Since Daddy was a Navy Seabee, he was sent to the Philippines to lay the airstrips for the Marines to land.  Although the condition can affect any exposed part of the body, it is more common in the limbs. It can extend through the muscles and tendons, and even reach the bones and, in Daddy’s case, the heart.

Winford Amyx was the best Father who ever lived, a loving man, a hard worker and a true American Hero. 



Here is a favorite meal of his that my Mom made often.  It is wonderful, quick and so very easy.  It makes its’ own mushroom gravy, so have the mashed potatoes ready!  That was Daddy’s favorite way of having these tender pork chops – with mashed potatoes and buttered peas.

WORLD'S GREATEST PORK CHOPS
Roll boneless pork loin chops in flour (on wax paper). Brown slightly in a little oil. Salt & Pepper to taste.

Place chops in baking dish. Cover with 1 can cream of mushroom soup. Pour 1 soup can water over top.  ** You can add a can of mushroom pieces to the soup.

Cover with foil; bake about 2 hours at 350-degrees. Remove foil; bake for 10 minutes more.

  1. What a loving tribute to the best Dad that anyone could have ever had!!! We have so many beautiful memories. I always remember how hard he worked at Phillip Carey and then would work extra jobs (painting, carpentry etc.) so we could have the best Christmas ever or a vacation (to Florida!!).
