Ahoy Mattee’s! I don’t know what it is that makes me this
way. Maybe it’s being in Florida where
our famous pirate Gaspar is revered; maybe it’s that Disney World is home to
the best ride in the world, Pirates of the Caribbean; or maybe I’m just in love
with Johnny Depp. But whatever the
reason, I love all things PIRATE! So
today, I pay tribute to all those great men who sailed the sea, hid golden
treasure and somehow managed to start one of my favorite restaurants … CAPT.
D’s! I know that most people think of
Red Lobster or Bonefish Grill when they want good seafood, but to me, nothing
quite beats Capt. D’s for the greatest crunchy battered fish and their glorious
hushpuppies! Hope this recipe helps you
to make your own right in your own Galley!
CAPTAIN D’S COPYCAT BATTER FRIED FISH
2 lbs pollock fillets or 2 lbs cod
fish fillets
1-1/2 cups flour
1 (1/4 ounce) package dry yeast
1 cup beer
1-1/2 cups flour
1 (1/4 ounce) package dry yeast
1 cup beer
1 egg
1/2 cup hot water
1/2 cup hot water
1/2 teaspoon salt
1 teaspoon Black Pepper (opt)
1/2 teaspoon Cayenne Pepper (opt)
In a bowl mix the yeast and beer.
In another bowl beat together the egg, hot water, salt and peppers.

Add the egg mixture to the beer. Slowly beat in the flour until batter is consistency of light pancake batter.
Roll or dust fish with flour ; pat the fish after applying flour to remove excess.
Drop fish into batter and cover thoroughly.
Fry in hot oil. Drain on baking rack or broiling pan.
Hush Puppies
1/4 cup Milk
1
Egg
1/2
cup Cornmeal
1/4
cup Flour
1
teaspoon Baking Powder
1
teaspoon Garlic Salt
1
teaspoon Onion Powder
Combine dry ingredients. Add egg and milk. Stir well. Should be the consistency
of bread batter. If too thin add more corn meal or flour.
Drop by teaspoonful into hot
grease. Cook until brown. Remove from grease with a slotted
metal spoon and drain on a paper towel
