I MISS MY SISTER!



It's such a blessing when your Best Friend has not only been your best friend for your entire life, but she's your sister at well!  That's the way it's always been with my sister Linda and me.  Growing up it was always me and Linda together.  We had other siblings, but we were the closest.  As children, we shared toys and games.  As we grew older, we shared crushes and our copies of “16 Magazine”!  As women, we share our secrets, our hopes and our dreams.  


In 2010, Linda retired after 30 years in the Library of the same school district.  Shortly before her retirement, Linda & her husband decided to move to New Mexico.  So the day after her retirement, they loaded up their Silverado and moved to Newcomb, New Mexico.  They are still there and doing well. 



To say I miss my sister would be the understatement of the year!  But we talk every day on the phone and we keep up on each other’s lives.  I know that ultimately, wherever we would have ended up in the world, nothing could ever break the bond between us.  Sisters by Blood, Sisters by Spirit .. we’ll always be there for each other no matter what.


I’m not talking behind her back, because Linda would be the very first to admit this … but she was never a domestic goddess in the kitchen!  However, like all people, she liked what she liked when it came to food.  She’s a vegetarian, so we never agreed when it came to food.  Except for one thing … we both adore Egg Salad.  Yes, just good old-fashioned egg salad.  When we lived in Ohio, Linda and I loved going to a little tea room called The Corner Café near my home in Loveland, Ohio.  We always ordered their delicious egg salad!  You can’t beat this classic salad made the old-fashioned and simple way and served on wheat bread.  YUM-MO!  Egg Salad … is this a joke?  who needs a step-by-step recipe to make it?  Well, Linda did (or anyone who’s never made it!).  Sometimes we forget that the simple things are good.  Egg salad is one of those old time recipes that we take for granted.  But if you want a traditional egg salad that is really no-fail, you’re going to LOVE this one!  Every now and then, Linda will call and say, “I’m making your egg salad for lunch today”.  As I said, she’s doing WELL now!

OLD-FASHIONED EGG SALAD


6 · hard boiled eggs

1/2  cup Miracle Whip (or mayonnaise)

Just a squirt of lemon juice

1 tablespoon · yellow mustard

1/2  teaspoon celery salt

1/2  teaspoon · onion salt

1/4  teaspoon · black pepper

6 slices of bread (I like wheat or sourdough, toasted)



Peel all 6 eggs, chop up 3 of the hard boil eggs and put in bowl.  Take remaining 3 eggs, remove yolks and set aside, chop up the egg whites and add to bowl of chopped eggs



Take the 3 egg yolks and place in a bowl, add Miracle Whip, yellow mustard, celery salt, onion salt and pepper, mix all together until well blended



Add egg yolk mixture to the chopped eggs and fold in till mixed.  Spoon onto your bread and enjoy.  Makes 3 servings.

  1. Aw, THANK YOU, Nancy, for everything you said!! LOVE YOU AND MISS YOU EVERY DAY!!!! I do make egg salad but doesn't compare to YOURS! I have mastered "Easy Peanut Butter Cookies", though!! I also miss "The Corner Café" and "The Red Squirrel"....and FRISCH'S!
