A SPECIAL DISH FOR FAMILY DINNERS



Broccoli is one of our favorite side dishes.  I usually make this for Christmas Eve dinner.  Once I made two pans – one for Christmas Eve and one for Christmas Day at Mom’s.  They were both empty on Christmas Eve night!  I usually triple this recipe for crowds.  It’s so simple, yet so wonderful.

BROCCOLI CASSEROLE



2 pkg. frozen chopped broccoli, thawed & drained          

1 lb. Velveeta cheese

Ritz crackers, crushed

1 stick margarine, melted



Cook & drain broccoli.  Put in casserole.  Slice cheese over top.  Cover with Ritz cracker crumbs; pour margarine over all.  Bake at 350-degrees for 20 minutes.

  1. I remember so much you bringing the broccoli casserole on Christmas Eve and Christmas Day---because one pan would never be enough for us!!! Mom alone could have ate one pan--she LOVED broccoli. And I remember MANY other dishes/pans you brought---so many that we had a relay team to bring them in from your car!! Everyone looked forward to yours and Steve's wonderful cooking and baking! Love you!
